La Chaumiere approaches French dining through continuity. Gerard Pain founded the Georgetown restaurant in 1976 to recreate the country cooking of his birthplace in his adopted city. The restaurant now identifies Gil Fornaris as proprietor and Debora Christ as executive chef. In 2026, the restaurant reaches fifty years of a history still expressed through its cooking.
The most distinctive evidence sits in preparations that depend on kitchen work rather than fashionable ingredients. The house makes its own white sausage, country pâté and pike quenelles. On the dinner menu, the sausage is accompanied by Madeira sauce and caramelized apples. The quenelles—delicate fish dumplings—come with lobster sauce, giving a visitor unfamiliar with the term a clear idea of the dish’s character.
Other choices show how much the restaurant still asks diners to participate in the rhythm of a traditional French meal. Its cheese soufflé takes additional preparation time. Dessert soufflés, including chocolate and Grand Marnier versions, are ordered with dinner.
