Chef Carlos Delgado’s ground-floor dining room in Blagden Alley concentrates on coastal seafood and the culinary traditions of the Andes. The restaurant shares a building and founders with Amazonia, but the two are distinct experiences: the upstairs restaurant and bar should not be confused with this focused tasting room.
Delgado’s connection to Peru is personal as well as professional. In a 2024 interview with MICHELIN, he described learning from his grandmother and the importance of market visits to his understanding of food. MICHELIN named him its Washington, D.C.
