Los Chapos Tacos Ybor

A 2020 food-truck story grown into a Ybor taco kitchen, with beef birria, glazed pork belly, gobernador shrimp and sweet-potato tacos.

About Los Chapos Tacos Ybor

The truck that became a Ybor kitchen

Christopher Rodriguez began selling tacos from a truck outside his other business. Los Chapos dates that start to 2020; the operation has since expanded around Tampa Bay. The Ybor address remains 951 East 7th Avenue, with its own menu, contact and ordering window.

Beef birria is a central attraction. The current Ybor order contains two cheese-filled, griddled tacos and broth for dipping. Pork-belly chicharrón takes a less traditional route with an Asian-barbecue glaze, queso fresco, onion and cilantro. A gobernador pairs shrimp, melted cheese and roasted poblano in a crisp corn tortilla. These are separate preparations rather than interchangeable meat substitutions.

Pastor uses adobo pork and caramelized pineapple; carnitas add chimichurri and pickled onion. A camote taco combines charred sweet potato, cauliflower, crema, queso fresco and pepitas. Portobello with chimichurri and cheese offers another vegetable option. The rice-based bowl and rice-free burrito make different meals; the house specifically keeps rice out of its burritos.

Ybor and the wider family

The latter three are regional alternatives outside Tampa city. Ybor is listed Monday–Saturday from 11 a.m., Sunday closed; dining service commonly ends 11 p.m., with some Friday–Saturday pickup windows later. Pickup, delivery and catering are available. Favorable experiences highlight pastor, dips and brisk service, while busy periods can bring lines.

Order specifically from Ybor.
