Chilte brings an experimental Mexican kitchen to Grand Avenue at the Egyptian Motor Hotel. Chef Lawrence “LT” Smith draws on street-food beginnings, the Southwest and personal influences, with a repertoire that moves between recognizable forms and unexpected combinations. Food & Wine selected Smith for its 2024 Best New Chefs class, but the restaurant is more usefully understood through the way its dishes are built. A taco, quesadilla or mole provides a familiar framework; what the kitchen puts inside or beside it can change the direction of the meal.

The restaurant’s sample menu, explicitly covering both current and past offerings, makes that approach clear. A green-chorizo vampiro brings together a fried masa tortilla, asadero cheese and chapuline schmaltz. A hoja-santa quesadilla uses asadero and goat cheese, with huitlacoche or chapulines among the possible additions. Mole de la casa accompanies changing flautas, while birria tacos are illustrated with squid-ink corn tortillas or flour tortillas and a miso consommé. These examples explain Chilte’s repertoire without making each dish a permanent fixture. The menu also shows interest in vegetables and fruit, including a tomato tostada and a seasonal salad, rather than confining the kitchen’s ambition to meat.

The cocktail program extends the same curiosity. Its published combinations bring agave spirits into contact with ingredients such as tomatillo, pepita, poblano or cacao, alongside alcohol-free choices. That makes drinks part of the culinary conversation, although a meal can stand on its own. Chilte suits diners who enjoy a changing menu and want Mexican references interpreted through a contemporary Phoenix kitchen. The strongest way to approach it is with interest in the whole composition: tortilla, filling, sauce and accompaniment together, rather than the expectation of a conventional taco dinner.
