About El Rodeo Taco Express
From a parking-lot truck to the Ware Road canopy
El Rodeo Taco Express began on September 27, 2013, as a food truck in an open parking lot. Its family describes roots in Monterrey, Nuevo León, and identifies trompo al pastor as the preparation that launched the business. The current taqueria's canopy and open dining area preserve something of that beginning, with a meat-market connection through El Rodeo Meat Market.
The taco order comes as five corn or flour tacos with fresh and grilled onion, cilantro and charro beans. Fajita, bistek, trompo, tripa and chicken give a group several routes through the menu. Trompo can be requested crisp or soft, a more useful distinction than treating every pastor order as the same texture. A separate combo reduces the taco count to four and adds half a baked potato and a canned drink; that order uses one meat.
Other formats use the same kitchen differently. Espadas are corn tostadas with meat and mozzarella. Lonches Progreso put a filling inside bolillos with lettuce, tomato, cilantro and guacamole. A sincronizada brings meat and mozzarella into flour tortillas, with vegetables beside it. The broader botana combines chips, beans, cheese, grilled meat, quesadilla, tortillas and rice, making it a practical shared-table alternative.
Takeaway, delivery and larger events
Find the restaurant at 6300 North Ware Road. Call 956-661-0870 or 956-661-0871. Its website gives Tuesday–Thursday 5 p.m.–midnight, Friday–Saturday 5 p.m.–1 a.m. and Sunday noon–10 p.m.; Monday is closed. This is an evening restaurant during most of the week.
Takeaway and delivery are listed through ordering platforms, including Uber Eats; the two published phones are general restaurant contacts. Catering is a separate service: the business offers a food truck for events with a fifty-guest minimum and a three-hour event allocation, including preparation and service, as well as delivered catering for homes and businesses. Those conditions describe an event booking, not an ordinary delivery minimum.
