Mayahuel gives its Astoria dining room a Mexican identity rooted in the work of making masa. The family behind the restaurant traces its origins to Puebla and describes a daily process of soaking, rinsing and stone-grinding Mexican heirloom corn before pressing tortillas by hand and cooking them on a comal. That account gives a concrete basis for the house’s emphasis on corn. The menu then takes those tortillas into tacos, tlayudas and other preparations, with seafood and moles widening the dinner beyond a single familiar form.
An aguachile tatemado brings shrimp together with avocado, cucumber, onion and a dark aguachile sauce. The tlayuda starts from a crisp corn tortilla with black beans, Oaxaca cheese and salsa macha. Gorditas contain pressed pork chicharrón and Oaxaca cheese, with guajillo cream. These starters let a diner compare acidity, a crisp tortilla and a fuller masa preparation.
