About Le Café Suisse

Le Café Suisse, Chef-Driven Cooking in Bex

Le Café Suisse is a fine-dining restaurant in Bex, in the Swiss canton of Vaud. Chef Marie Robert and her partner, Arnaud Gorse, opened it 13 years ago. Robert leads the kitchen and was named “Cuisinière de l’année” by GaultMillau in 2019, receiving a score of 16/20—a mark reached by only 25 restaurants in French-speaking Switzerland. The guide explained her rise by noting that, at 35, the chef had matured and her spontaneous cooking had gained the relevance that defines a true chef-driven cuisine.

Seasonal and Creative Cooking

The restaurant works with fresh seasonal products and serves flavorful, colorful, creative dishes. The chef describes her style as imaginative and playful, with plates designed to surprise in both taste and appearance. Offerings include several menus, among them “Mission impossible,” “Menu de Marie,” and a three-course menu.

The Dining Room and Its Character

Described as understated, welcoming, and contemporary, the restaurant retains distinctive features including a double-helix staircase, an upstairs balcony, and a dining room with a high ceiling. The room was redesigned to be both functional and comfortable, and the kitchen is equipped for a dedicated brigade.

Recognition and Dining Guides

In addition to the 2019 “Cuisinière de l’année” title and GaultMillau score of 16/20, the restaurant appeared in La Liste’s 2021 Hidden Gem Awards directory. Its work has also been featured in press articles and a recipe published by Gault & Millau.
