Colmado 1917 moved its concept to Iberostar Heritage Grand Mencey while keeping the idea behind its name: the old provisions shop, where ingredients were preserved and served with respect for their origins. Michelin describes a counter for six and a single table for four; the small scale shapes both the meal and the pace of a visit.

There are no cooktops. Each plate is finished to order using techniques that leave the ingredients largely undisturbed: curing, escabeches, tartare, marinades, charcuterie and Canarian cheeses.
