L'Escaleta, fine dining in inland Alicante

L'Escaleta is a fine dining restaurant located in Cocentaina, in the interior of the province of Alicante. Its proposal revolves around the cuisine of chef Kiko Moya and the dining-room and wine work of the sommelier Alberto Redrado, and the establishment has two Michelin stars and Repsol Suns, according to its own presentation.

Kiko Moya and Alberto Redrado: kitchen and wine cellar

The restaurant’s management rests on two figures with differentiated responsibilities. Kiko Moya works as chef and, according to the description of the establishment itself, has driven an evolution of its elaborations to place them in the elite of Spanish cuisine. Alberto Redrado occupies the function of sommelier and manages a wine cellar with more than a thousand references, a dedication that the house links to his passion for wine.

Career: 1980 to generational succession

The restaurant was born in 1980 in a semibasement of Cocentaina, as a project of two young couples, which gave it a family character from the beginning. Eventually it consolidated in the region until it appeared among the restaurants of reference, and its involvement in Cuina i Tertúlia also gave it presence in circles of the city of Alicante.

In 2005 there was a generational relay: Alberto Redrado, son of the chef, took over the room, while Kiko Moya, son of the head of the room, went on to lead the kitchen. The change was, according to the house itself, a new stage marked by greater restlessness and a bolder vision, maintaining the common project. The original team included Ramiro Redrado as chef and Paco Moya as dining-room manager.

Gastronomic experiences and shop

The establishment markets experience packages for two people, including VAT. The catalog includes the Experiencia Sabor from 365 euros, the Experiencia Saboer from 445 euros and the Experiencia Mesa 0 from 545 euros. The website also has a store, reservation service and gift option, as well as the possibility of placing orders online or by phone.

Events and celebration of the 40th anniversary

Among the activities of the restaurant are the organization of events and the commemoration of its 40th anniversary, which the house collects as its own section along with news, prizes and press information.
