About Sushi Sakuta

Sushi Sakuta, Japanese omakase at Millenia Walk (Singapore)

Sushi Sakuta is an omakase sushi restaurant located at Millenia Walk in Singapore, operated by Le Mondo Ryori Pte Ltd. Its offering is built around an omakase-style menu presented by the establishment itself as an opulent Japanese cuisine concept, prepared by chefs with experience at Michelin-starred restaurants. The experience is conceived as a journey individually curated for each guest.

The dining room and the hinoki counter

The physical space is central to the concept. The dining room is arranged around an unbroken piece of hinoki wood over five metres long, seating ten guests. The venue also has an intimate private dining room for six people. The lighting, described as resembling moonlight, and the presence of a collection of historical Japanese art complete the atmosphere, which the company presents as a sensory experience of authentic Japan.

The team and kitchen leadership

The restaurant is led by Chef Yoshio Sakuta, who began his culinary journey at 18 and trained at renowned sushi and omakase restaurants. At the helm of Sushi Sakuta, he applies an approach of precision and artistry to every dish.

The team includes Shunsuke Yoshizawa, with 22 years of experience, who works under the idea that every ingredient is a gift from the environment and the conditions that surround it, and Iwabuchi Makoto, with over 20 years of experience at fine dining Michelin-starred restaurants and 50 Best recognitions in Japan and Southeast Asia. Makoto holds the position of Head Sommelier at Sushi Sakuta Singapore, which received a Michelin star in 2023.

Method of work: Edomae-style sushi

The kitchen declares itself a tribute to Edomae-style sushi. The team explains that every step of the preparation process is calculated so that the guest tastes the ingredients at their best, and notes that the flavour varies greatly from day to day even between fish of the same species caught in the same area. For this reason, in addition to maintaining the base of the Edomae style, they introduce occasional adaptations to draw out the unique characteristics of each piece.
