San Marcos taco guide: breakfast cutoffs, classic plates and loaded Texas tortillas

Herbert’s, Toma Taco and Fuego offer three different taco meals, with useful differences in breakfast hours, fillings and ordering.

The breakfast taco does not keep the same hours everywhere in San Marcos. At Herbert's it belongs to a menu that ends at noon. Toma Taco states an early-price cutoff and continues with a broad Mexican menu. Fuego labels its breakfast tacos as an all-day choice and puts brisket and fried chicken into other large tortillas. Knowing those differences saves more time than treating every taco stop as interchangeable.

Herbert's: a Riverside tradition since 1976

Herbert Sr. and Dora Rizk built Herbert's Taco Hut from grocery-store beginnings. The classic meal still joins tacos to enchiladas, chalupas, rice and beans. Ground beef or shredded chicken can go into crisp, soft-corn or flour shells; a separate asada street-taco order uses mini corn tortillas, queso fresco and charro beans.

Breakfast has a clear place in the day: only until noon, with weekend opening at 7 a.m. rather than the weekday 10 a.m. The range runs from bean-and-cheese tacos to carne guisada and picadillo combinations. For someone seeking a familiar Tex-Mex plate rather than a single handheld lunch, the named combination dinners provide another route through the kitchen.

Toma Taco: from nopal and eggs to shrimp with mango

Toma Taco starts at 7 a.m. Tuesday through Saturday, one reason to know its South LBJ Drive address before Herbert's weekday opening. Nopal with egg, machacado and migas expand the breakfast choices. The menu describes an 11 a.m. price change, which is different from declaring breakfast over.

Later, the individual taco selection gives beef cheek, tongue, pastor and green-salsa chicharrón their own places. The Marisquero uses grilled shrimp with mango sauce, while Sinaloa brings tilapia, cabbage and pico. The broad menu also gives a group large quesadillas, tortas and covered burritos without requiring every diner to make the same sort of order.

Fuego: the composed taco and the all-day egg

Fuego's San Marcos menu takes a different direction. Brisket with Dr Pepper barbecue sauce and fried onion, chicken with chipotle creamed corn, or a vegetarian tater-tot taco make the tortilla a carrier for a complete combination. Egg-and-cheese choices remain available all day according to the menu, with boxes by the dozen for a group.

The branch is on the I-35 frontage road and advertises 24-hour service Tuesday through Sunday. Its current page also carries a temporary drive-through closure notice, so a late car-window meal should not be assumed. The profiles collect the direct phones, menus and ordering options, including the service details that the general advertising leaves unclear.

Bottom line

Choose the breakfast timing first, then the taco format: classic plate, individual Mexican fillings or a loaded Texas combination.
