Where to Try Kurume Tonkotsu Ramen: Taiho Honten or Seiyoken?

Compare two historic shops to understand Kurume tonkotsu: Taiho’s broth and Seiyoken’s styles.

Ramen in Kurume is not a recent trend: the city traces its roots to 1937, when the Nankin Senryo stall began serving noodles with broth influenced by Nagasaki cooking and Yokohama’s shina soba. About a decade later, a pot left boiling at the Sankyu stall produced the cloudy soup associated with tonkotsu today. The local method called yobimodoshi keeps broth in the pot and replenishes it gradually, creating a persistent flavour that distinguishes Kurume’s tradition from other Fukuoka soups.

Two restaurants show that history across different generations. Taiho began as a mobile stall in 1953, and its main shop promotes the replenished broth alongside “Mukashi Ramen”, topped with crunchy fried pork fat. Seiyoken opened as a yatai in 1952, closed decades later and returned in 2009 through a customer-led revival; diners can compare its street-stall-style soup with the clearer “suppin” option. These are not identical recipes or a contest for one “best” ramen, but different readings of the same pork-broth culture.

Reviews of Taiho celebrate the deep broth, noodle texture and lively atmosphere of a busy shop; some say the portion feels small or the pork aroma is pronounced. Seiyoken earns praise for savoury soup without too much grease, gyoza and fried rice, while some diners prefer stronger tonkotsu or mention mealtime queues. For a fair comparison, order a basic bowl at each, taste before adding condiments and add sides only if you want a larger meal. The profiles and ratings refer to these exact main shops, not branches in other cities.

Taiho Honten is about a ten-minute walk from Nishitetsu Kurume Station at 11-8 Totsumachi and opens 10:30 am–9 pm except New Year’s Day. Seiyoken Honten is in Suwanomachi with parking, a long walk or short taxi ride away; it opens 11 am–9:30 pm on weekdays and 10:30 am–9:30 pm on weekends and holidays (last order 9 pm); it closes on the third Tuesday and January 1. JR Kurume Station is not beside either restaurant, so decide whether to visit one or connect the route by local transport. If you have time for only one stop, choose Taiho for its main-shop tradition or Seiyoken for comparing two broths and ordering side dishes.

Bottom line

Taiho represents the stall tradition and its long-developed broth; Seiyoken offers a useful comparison between richer, street-stall and suppin styles.
