About Taiho Ramen Main Shop

Taiho began as a street stall in Kurume in 1953. Its main shop keeps that story in a family-friendly dining room with tables, benches and tatami seating. Kurume is widely considered the birthplace of tonkotsu ramen: the story starts with the Nankin Senryo stall in 1937, while the white broth is associated with another stall accidentally boiling its soup hard about a decade later. Taiho belongs to the next generation and promotes its own method, yobimodoshi, which keeps broth in the pot and replenishes it with newly cooked stock.

The menu pairs standard ramen with Mukashi Ramen (“old-style ramen”), a fuller broth topped with small crunchy pieces of fried pork fat. The style combines straight, low-hydration noodles with a creamy pork soup; gyoza and rice balls are among the sides. Menus, prices and availability can change, so start with the classic bowl or ask how the “mukashi” broth differs. An open kitchen lets diners watch part of the preparation, a feature several reviews mention positively.

Reviews of the main shop often praise the broth’s depth, noodle texture, chashu and patient service. Some visitors find portions modest, the pork aroma intense or lunch queues long; others say the detour is worthwhile and describe the shop as clean and orderly. It is a useful stop for comparing Kurume tonkotsu with Hakata: the broth tends to feel rounder and more persistent, rather than necessarily hotter. Ask about sizes and add-ons if you arrive hungry.

Taiho Honten is at 11-8 Totsumachi, about a ten-minute walk from Nishitetsu Kurume Station, with parking beside the restaurant. Telephone +81 942-33-6695. The official site lists 10:30 am–9 pm and closure on New Year’s Day; check for temporary notices. Lunch can bring a queue, so an earlier or later meal is more comfortable. Reaching the restaurant from JR Kurume requires a transfer within the city; plan from Nishitetsu Kurume or check local buses.
