About Belcanto
Belcanto: Contemporary Portuguese Cuisine in Chiado
Belcanto is a contemporary Portuguese restaurant in Lisbon’s historic center, in the Chiado district. Led by executive chef José Avillez, it is presented as a leading name in Portuguese gastronomy. The restaurant has two Michelin stars, three Repsol Guide suns, and ranked No. 42 on The World’s 50 Best Restaurants list.
The cooking brings tradition and innovation together. The restaurant describes its approach as recreating and reinventing Portuguese culinary traditions with products from different regions of the country. Service is described as welcoming, discreet, and attentive, in a sophisticated setting that connects the romantic character of old Chiado with a forward-looking perspective.
Tasting Menu and À La Carte Service
The restaurant offers two main dining formats. The Belcanto Tasting Menu traces the project’s evolution from its beginnings to the present. The à la carte option includes one or two starters, a main course, and dessert per person, chosen by the diner; appetizers are served beforehand and petit fours conclude the meal.
Management says each diner must choose either the tasting menu or à la carte, and that neither option may be shared by two or more people.
A Wine Cellar with More Than 350 Selections
Belcanto’s wine list includes more than 350 selections. About 80% are Portuguese wines, complemented by a broad international selection. The list includes sparkling wines, Champagne, whites, reds, late-harvest wines, Port, and Madeira from a range of regions and producers, large and small. It features both young and aged wines, along with rare and unusual bottles.
The dining-room and sommelier team is led by director and head sommelier Nádia Desidério. The team also includes sommeliers Rostyslav Fedotov, João Marques, and Francisco Loios; dining-room manager Luís Reis; host Nelson Cardoso; and hostesses Mariana Rolo and Beatriz Brandt.
Kitchen and Pastry Teams
José Avillez leads the kitchen as executive chef, alongside head chefs João Leitão and Miguel Gomes. The sous-chefs are José Duarte Gonçalves, Patrícia Muraro, Andrei Mitroi, Gabriel Pedro, and Mónica Gonçalves. Américo dos Santos is pastry chef, with pastry chef Filipa Figueiredo and porter Pedro Pinto. Rúben Ribeiro and Dante Cerezo are also part of the kitchen team.
The restaurant describes team members’ backgrounds across Portugal, Brazil, Romania, Venezuela, and the Philippines, including training at Portuguese hospitality schools and experience in international gastronomy.
