About MAZ Tokyo

MAZ Tokyo, Peruvian Fine Dining in Kioicho

MAZ is a fine-dining restaurant in Tokyo created by Peruvian chef and director Virgilio Martínez in collaboration with Mater, the research center he leads. The project brings to Japan the perspective Martínez developed at Central in Peru around biodiversity, culture, and ecosystems, and takes Mater’s motto from the phrase “Afuera hay más”—“There is more beyond.”

The cuisine is grounded in cultural and ecological knowledge of Peru’s landscapes and ingredients, and is presented as a new kind of dining experience in the Japanese capital.

The Team and Mater’s Philosophy

The restaurant is supported by a team trained in Mater’s methods and philosophy, which center on understanding cultures, curiosity, and exchange. The project says the team shares the idea that gastronomy can preserve and influence culture, and that this vision extends beyond Peru.

The cooking brings together Peru and Japan through biodiversity, people, art, and culture, translating those influences into a deeper dining experience.

Menus: Vertical Gaze and Pairings

The menu is built around the idea of a “vertical gaze,” which looks at a territory’s different elevations and the relationships they create among landscape, nature, and people. The restaurant lists the following options; prices include tax and are subject to a 10% service charge:

  • Vertical Gaze: A journey through nine different elevations, for 33,000.
  • Vegetable Vertical Gaze: A plant-based menu spanning nine elevations, without fish or meat, for 33,000.
  • MAZ Masters Pairing: A pairing featuring representative wines from South America, for 33,000.
  • MAZ Pairing: A selection of wines and spirits from Peru and leading regions around the world, for 22,000.
  • Experience and Senses: A nonalcoholic pairing with nectars and infusions, for 16,500.

Recognition

The restaurant ranked No. 28 on Asia’s 50 Best Restaurants 2026, and its website also displays Michelin Guide Tokyo distinctions for 2024, 2025, and 2026. It is also listed at No. 5 among Best Vegetable Restaurants in Japan for 2024 and No. 1 in Tokyo on “The World of Mouth” in 2023, according to the restaurant.
