About Aniar
Aniar, contemporary Irish cuisine with a Michelin star in Galway
Aniar is a Michelin-starred restaurant located in Galway's West End, in Ireland. Its culinary approach is based on the produce of the west of Ireland: the farms, wildlands and shores that surround the region. The menu changes with the natural cycle of the seasons.
The cuisine of Jp McMahon
The kitchen is led by chef-patron Jp McMahon. As well as using local wild and foraged ingredients, McMahon revives traditional cooking and preservation methods such as curing, pickling, smoking and fermenting. His stated aim is to look to the past in order to move towards the future of Irish food.
Tasting menu
The restaurant offers a tasting menu conceived as an immersive experience of Irish food through the ages, with a contemporary filter.
Cookery school
Aniar is also home to a boutique cookery school that runs one-day workshops and private classes. The classes are taught by Jp McMahon in person. According to the account of a participant featured on the website, the chef guides the group with a collaborative, shared-leadership style, encouraging shared discovery rather than direct instruction.
