About Auberge Sauvage
Auberge Sauvage, Food and Lodging near Mont-Saint-Michel Bay
Auberge Sauvage is an inn in Servon, near Mont-Saint-Michel Bay, combining a restaurant and guest accommodations. Chef Thomas Benady and Jessica Schein welcome guests to a 16th-century former rectory surrounded by gardens and fruit trees. The project is rooted in its surroundings: the cooking, landscape, and lodging share a focus on the bay area.
Thomas Benady’s Table
Thomas Benady’s cooking is presented as an expression of the bay’s landscape, shaped by the wind and sea spray. The inn describes it as “wild”—both rugged and gentle—and connected to a place of rich grass, abundant water, and fertile soil. The dinner menu costs €120 per person, excluding drinks and cheese. Dinner guests may arrive starting at 7 p.m., and the inn asks them to be punctual so service can run smoothly. Pets are not allowed. Guests are also asked, when possible, to avoid wearing perfume so it does not interfere with the sense of smell, especially during wine tasting.
Lodging: Three Rooms and an Apartment
Accommodations are in the 16th-century former rectory. Thomas and Jessica restored the stone buildings without changing their character and created a restaurant dining room and bright, airy guest rooms. The inn has three rooms named Passiflore, Berce, and Mélisse. A room stay for two costs €390 and includes one night, dinner (€120 per person), and breakfast; drinks and cheese are not included. An apartment is also available across from the restaurant for €300 per night without breakfast. For two guests sharing one room, a stay costs €410; for four guests in two rooms, €780; and for six guests in two rooms with an extra bed in the living room, €1,050. Each package includes the night, dinner (excluding drinks and cheese), and breakfast.
