Cédric Burtin: Two-Michelin-Star Dining in Saint-Rémy

Chef Cédric Burtin’s restaurant, awarded two Michelin stars, is in Saint-Rémy near Chalon-sur-Saône, in a historic building known as the Moulin de Martorey. Burtin has Burgundian roots and grew up in a family of Charolais cattle farmers. He opened the restaurant in 2008 in this 19th-century mill, one of the last surviving examples among the 13 mills established along the Orbize River from the 12th century onward.

A Restored Mill with Two Distinct Dining Rooms

The restaurant occupies a contemporary space where wood and stone create warmth. The kitchen is open to the dining room, allowing guests to watch dishes being prepared. There are two rooms with distinct atmospheres: one in the heart of the mill, with its old gears on display, and the Véranda, filled with light from a large glass wall and overlooking the Orbize River.

Local Ingredients and Seasonality at the Center

Burtin’s cooking is grounded in close relationships with local producers and artisans. He works with seasonal ingredients and aims to bring out each one through silky sauces, precise textures, and attention to detail from the main ingredient to the garnish and seasoning. His dishes feature Charolais beef, Bresse poultry, duck, fish from local farms, and shellfish from Brittany. The restaurant also has a garden tended by a full-time gardener, supplying vegetables and herbs to the kitchen.

Menus and New Creations

The restaurant’s website lets guests view the menu and book online. It said the chef was working on new compositions to be added to the restaurant’s menus, described as still-confidential trials. The restaurant also offers a gift box.
