About Aux Lyonnais

Aux Lyonnais, a Lyon-Style Bouchon in the Heart of Paris

Aux Lyonnais is a restaurant serving traditional Lyonnaise cuisine at 32 rue Saint-Marc in Paris’s Bourse district. Open since 1890, it presents itself as a Lyon-style bouchon and retains an interior with moldings, wood paneling, floral tile friezes, and skai banquettes that are part of its historic character.

The restaurant is part of Groupe Dumant, a family with a passion for food and the French art of living. The group operates about a dozen restaurants in Paris and says its goal is to preserve France’s bistro and culinary heritage while adding a modern touch.

A Menu Rooted in the Region

The menu centers on Lyon’s classics, seasonal dishes, and a selection of Rhône and Beaujolais wines chosen to accompany them. It includes starters, main courses, and desserts, some paired with specific wines.

  • Starters: Baked eggs with cream and local bacon (€18); a dozen Burgundy snails with Montlouis-sur-Loire from Domaine François Chidaine; pike quenelle with crayfish, Nantua sauce, and the Pfinsberg grand cru from Domaine Camille Braun.
  • Main courses: Bresse chicken with cream and yellow wine, seasonal mushrooms, and Moulin-à-Vent Cuvée Vignes de 1903 from Domaine Yohan Lardy; diver-caught scallops with beurre blanc and fumet, celery-root purée and hazelnuts, glazed leeks, and Brouilly Vieilles Vignes from Domaine Georges Descombes; Aux Lyonnais pike quenelles with white Saint-Joseph from Domaine Hugo et Pauline Villa; beef tenderloin with pepper sauce and grenaille potatoes, paired with Côtes-du-Rhône Cuvée Kamaka from Domaine Graeme et Julie Bott.
  • Desserts: Alain Chapel’s small jasmine-tea pot with Cerdon de Bugey from Domaine Rondeau; chocolate mousse with cocoa nibs and cazette, paired with 10-year-old Port from Maison Graham’s.

The restaurant describes its cooking as straightforward and generous, with sauces made to order and carefully measured spices. It presents the menu as a celebration of Lyonnaise tradition, adapted to the rhythm of the seasons.
