Mosuke, Mory Sacko’s Cooking in Paris’s 14th Arrondissement

Mosuke is a Michelin-starred restaurant at 11 rue Raymond Losserand in Paris’s 14th arrondissement. It opened in 2020 and is led by chef-owner Mory Sacko, who developed his technique and culinary perspective at major Paris hotels, including Le Royal Monceau and Mandarin Oriental.

A Constantly Evolving Flavor Lab

Sacko describes Mosuke as “a little perpetual laboratory.” Its pantry holds more than 300 containers of house-made infusions, herbs, macerations, and ferments, used to develop new flavors. The team experiments and tastes continuously until it finds the balance that will make its way onto the plate, with seasonal changes throughout the year.

Tasting Menus and Service

The restaurant offers two tasting menus. At lunch, from noon to 2 p.m., “Migration” features 15 courses for €145. At dinner, from 7 to 9:45 p.m., “Vol de nuit” features 25 courses for €255. Both menus can be adapted as vegetarian versions.

About 15 people work across the kitchen and dining room during each service: cooks, sommeliers, and servers. Ten work in the kitchen and five in the dining room, bringing together emerging talent and experienced specialists.

Chef Recognition

Mory Sacko has received several distinctions, including the Gault & Millau grant, the Michelin Guide’s Young Chef Award 2021, La Liste’s Nouveau Talent 2021 recognition, and Time magazine’s Next Generation Leader distinction.

Hospitality Philosophy

The restaurant embraces the Japanese concept of omotenashi, which refers to hospitality attentive to guests’ well-being and to the moment at hand.
