About Daniel & Denise

Daniel & Denise, Lyonnais Bouchons Led by Chef Joseph Viola

Daniel & Denise is a Lyon-based restaurant group led by chef Joseph Viola, a Meilleur Ouvrier de France, and his wife, Françoise. The group includes three Lyonnais bouchons—Créqui, Saint-Jean, and Croix-Rousse—and a specialty food counter in Villeurbanne. All three restaurants hold a Michelin Guide Bib Gourmand, according to the group.

The concept is a refined Lyonnais bouchon devoted to cuisine canaille: classic French dishes prepared with finesse and generosity and served in a convivial atmosphere. Joseph Viola leads the kitchen, while Françoise Viola oversees the dining room.

The Story Behind the Restaurants

Joseph Viola trained in acclaimed Michelin-starred kitchens and earned the Meilleur Ouvrier de France title in 2004. That same year, with his wife Françoise’s support, he took over the Daniel & Denise bouchon on Rue de Créqui from chef Daniel Léron, a 1976 Meilleur Ouvrier de France. The restaurant describes the move as a pioneering decision that made Joseph Viola an ambassador for Lyonnais cuisine.

In 2012, the couple opened a second bouchon, Daniel & Denise Saint-Jean, in historic Vieux Lyon. In 2015, they opened a third in Croix-Rousse, in a fully renovated restaurant. In 2017, they launched Épicerie Daniel & Denise in Villeurbanne, a food shop and counter offering the chef’s signature dishes to go.

Cuisine Canaille and Signature Dishes

The menu draws on classic French and Lyonnais recipes. Dishes highlighted by the group include duck foie gras pâté en croûte with sweetbreads—named world champion in 2009—the pike quenelle with Nantua sauce, omelet du curé with crayfish, boiled veal head with ravigote sauce, Bresse chicken with morels and cream, and tarte Tatin with Saint-Genix praline.

The restaurant describes this cooking as lively and comforting, focused on the ingredients, flavor, and excellence.
