About Alchémille
Alchémille, Michelin-Starred Seasonal Cooking in Kaysersberg
Alchémille is a fine-dining restaurant in Kaysersberg Vignoble, in Haut-Rhin, between the Vosges Mountains and the Alsace Wine Route, near Colmar. Chef Jérôme Jaegle and his wife, Marie-Laure, run the restaurant. Its cooking is organized around the region and the seasons, without a fixed menu: dishes are shaped by the garden harvest, foraging outings, and the products available at the time.
A Michelin-Starred Table with a Green Star
The restaurant earned a Michelin star in 2017 and also holds the guide’s Green Star for its sustainability approach. Its cooking is presented as always evolving, guided by the season and the natural surroundings of Haut-Rhin.
Menus and Dining Experience
The offering is organized around three tasting journeys, or “balades,” conceived as routes through the plant world, local terroir, and culinary craft. The team takes diners’ preferences and restrictions into account before each service to tailor the experience.
For its 10th anniversary, the restaurant offered a “balade des 10 ans” celebrating representative dishes from its history. This limited-edition dinner menu was available through the end of December and consisted of nine “sentiers” for €180 per person.
Local Landscape, Gardens, and Foraging
The project is based on permaculture gardens and fruit trees of forgotten varieties, as well as the foraging of wildflowers, roots, and herbs. The restaurant works with local producers and, according to its own description, the last fisherman on the Rhine to help keep food traditions alive.
In spring and summer, Jérôme Jaegle leads wild-plant foraging outings, teaching participants how to identify and gather plants respectfully. The activity concludes at the restaurant with a tasting connected to what was gathered.
The Chef’s Background

He trained with other chefs and took part in culinary competitions, earning several awards. In 2015, he returned home to open Alchémille with Marie-Laure; the restaurant received its Michelin star in 2017.
