Auberge du Vertmont, Seasonal Cooking in Boeschepe

Auberge du Vertmont is a restaurant and lodging property in Boeschepe, in northern France, associated with chef Florent Ladeyn. Its cooking follows the seasons and the work of nearby producers, with set menus that change according to the ingredients available.

Menus and the Dining Experience

The menu is organized around two main options. “Petite balade” costs €50 and is available only at lunch; a beverage pairing costs €30, or €25 for the nonalcoholic option. “Expérience totale” costs €80 and is also served at dinner; its beverage pairing costs €45, or €35 without alcohol. The property also offers “L’Estaminot” for €15: a soft-boiled egg with a buttered mouillette, a haddock or chicken croquette with Maroilles cheese, and French toast brioche with milk ice cream and caramel.

The menus are fixed and cannot be adapted for food allergies or intolerances unless these are communicated when the reservation is made. Without advance notice, the restaurant cannot modify the menu.

Reservations and Service

Table reservations open in 60-day booking periods. When the weather allows, aperitifs may be enjoyed on the terrace only between 12 and 12:30 p.m. or between 7 and 7:30 p.m. The restaurant is open Tuesday through Saturday. The property is closed from December 20, 2026, through January 4, 2027, inclusive.

Guest Rooms

The guest rooms are booked with a dinner table automatically included. In the evening, only the “Expérience totale” menu is available. Room reservations open every two months, on the first day of the month at 9:30 a.m. Rooms are available from 4:30 p.m., and restaurant guests are welcomed between 7 and 8 p.m. Dogs are not allowed in the rooms. Guests with “Petite balade” gift certificates may use them as a credit toward the bill, up to the original value of the certificate.

Gift Cards

The property sells gift cards through its website. Payment is secure, and the gift card is sent directly by email, ready to print and give.
