About Noma
Noma, a leading restaurant in Copenhagen
Noma is a restaurant based in Copenhagen (Denmark) that, after more than twenty years in operation, is entering a new phase. The establishment itself grounds its cuisine in respect for its geographical context and the seasons, and notes that its menu, design and identity have been built on that idea.
The company announces its reopening in Copenhagen in August 2026, not as a return to the previous model, but as the start of a new chapter. In this new cycle, operations pass into the hands of a renewed leadership team: Mette Brink Søberg as Head of R&D, Pablo Soto as Executive Head Chef and Annika de Las Heras as CEO.
Twelve seasons as the new annual rhythm
The restaurant describes a structural change: compared with the three seasons that marked its year over the last decade, the new approach envisages twelve seasons, one per month, each with its own expression tied to the ingredients, landscapes and ideas of the moment. The company presents this shift as a commitment to staying closer to nature and to its own creative curiosity.
Residency in Los Angeles and shop in Silver Lake
Before returning to Copenhagen, Noma ran a sixteen-week residency in Los Angeles, between 11 March and 26 June, documented as part of a film project. During that stay, the team worked with local ingredients, producers and traditions, and the kitchen was guided by the Pacific, the mountains, the desert and the long distances of the area.
Alongside the residency, the company opened a Noma Projects shop in Silver Lake, which the site states remains open, and hosted events with collaborators at MAD, as well as working with local cooks, artists and communities.
Products, coffee and publications
Beyond the restaurant, Noma sells a collection of pantry products under the name Noma Projects, presented as a way to bring its flavours home. The company also offers Noma Kaffe, a coffee subscription it describes as the fruit of a decade of work, and has the book The Noma Guide to Building Flavour available to order.
The site also mentions a flavour club with an open waitlist, a newsletter for updates and reservations, and content such as the series Omnivore on Apple TV+ and the non-profit project MAD, described as a global initiative working on the future through food.
