About Tanière³

Tanière³, boreal gastronomy in the vaults of Petit Champlain

Tanière³ is a fine dining restaurant located in Old Québec, inside the historic vaults of the Petit Champlain district. The establishment holds two Michelin stars (2025) and presents itself as a space where each meal is conceived as a sensory immersion in an underground setting steeped in history.

The concept revolves around a single tasting menu, defined as a reflection of the terroir, the season and the restaurant's culinary universe, deeply rooted in Quebec. The cuisine is built around a network of local producers and suppliers.

Producers and origin of ingredients

The restaurant works with five foragers spread across different regions of the province, giving it access to wild plants from Quebec. Meats come exclusively from farms selected according to animal welfare and environmental respect criteria. Vegetables are grown by a childhood friend of the chef, with whom he personally selects the seeds each winter.

Among the producers identified by the restaurant are:

  • Canard Goulu (duck), in Saint-Apolinaire.
  • Fabien, the forager (herbs and spices from the boreal forest), in Albanel.
  • Ferme Orléans (poultry), in Saint-Laurent de l'Île d'Orléans.
  • Les cerfs Jasmyr (deer), in Saint-Elzéar-de-Beauce.
  • Les Jardins d'Inverness (vegetables, fine herbs and flowers), in Inverness.

The restaurant states an eco-responsible approach that guides its daily decisions and that it links to the biodiversity from which its ingredients come.

Two experience spaces

The establishment offers two distinct service formats. The first, called the dining room vault, takes place in an intimate space oriented towards sensory immersion. The second, the chef's counter vault, is an exclusive experience that gives access to the world of chef François-Emmanuel Nicol and allows guests to observe the brigade during service.

Team and awards

François-Emmanuel Nicol appears as chef-owner, while Roxan Bourdelais appears as dining room director and owner. The restaurant is part of the group that also includes L'Orygine and Vieux Carré. As for awards, in addition to the two Michelin stars in 2025, the establishment gathers customer and specialized press reviews, among them those of journalist Ève Dumas of La Presse, who describes its concept as the most elaborate in Quebec's experiential gastronomy.
