Midland Taco House organizes much of its taco menu in four-piece orders on corn tortillas with onion and cilantro. Chicken, beef, pastor, chorizo and carnitas cover familiar choices, while suadero, longaniza, tripa, lengua and tinga make the selection more varied. The useful distinction is the preparation itself: suadero is a different order from a general beef taco, and the menu keeps longaniza separate from chorizo.

Birria also comes as four tacos. A birria quesadilla changes to flour with mozzarella, onion and cilantro. Ordinary corn quesadillas instead use Oaxaca cheese with lettuce, cream and crumbled cheese. A sope adds a thicker fried base, beans and a chosen meat beneath lettuce and dairy toppings. Chicken empanadas use handmade tortillas with shredded chicken and onion, and flautas are a separate four-piece fried chicken order.

Tortas carry beans, tomato, cheese, mayonnaise and lettuce with the chosen meat. The range follows many taco fillings into bread, including pastor, carnitas, suadero, lengua and birria. Burritos use rice, beans, cream and pico; guacamole and fries are additional choices.
