About Pizzeria Bianco
Pizzeria Bianco: wood-fired artisanal pizza from Phoenix
Pizzeria Bianco is a restaurant group founded by Chris Bianco in 1988, when he opened the first location in the back corner of a Phoenix grocery store. What began as a small business became a benchmark of the artisanal pizza movement in the United States. The group, which operates under the name BIANCO Restaurants, has locations in Phoenix (Arizona) and Los Angeles (California).
A group with a presence in Phoenix and Los Angeles
The company operates several establishments differentiated by concept and location. In Phoenix are Pizzeria Bianco Heritage Square (in downtown), Pizzeria Bianco Town & Country, Pane Bianco Central, Tratto and Bar Bianco, the latter next to Pizzeria Bianco at Heritage Square. In Los Angeles, Pizzeria Bianco Los Angeles and Pane Bianco Los Angeles operate. Each location has its own menu and, in some cases, reservation service.
Wood-fired pizzas and nationwide shipping
The house specialty is pizzas cooked in a wood-fired oven. In addition to dine-in service, the group offers shipping of its pizzas nationwide through Goldbelly, a distribution service that allows customers to receive the products directly from its ovens. The BIANCO Shop online store also sells merchandising and other brand products.
Chris Bianco, chef and owner
Chris Bianco is the chef and owner of the group. In 2003 he received the James Beard Award for Best Chef (Southwest), becoming the first pizzaiolo to earn this recognition. In 2022 he was again honored with the James Beard Award as Outstanding Restaurateur. Bianco has advised numerous fellow chefs and restaurateurs, contributing to the emergence of a generation of independent, artisanal pizzerias. Together with his partner Rob DiNapoli, he developed Bianco DiNapoli, a line of organic tomato products from California. In 2017 he published his first book, Bianco: Pizza, Pasta and Other Food I Like, an illustrated cookbook that gathers his most iconic pizzas and techniques for bringing the chef's methods to the home kitchen.
Media and documentary appearances
Chris Bianco was the focus of the first episode of the 2022 season of Chef's Table, the Netflix documentary series dedicated to gastronomy. The episode, centered on pizza, reviews his professional career. The group also maintains a collaborations section and a press section on its website.
