The second pays homage to the Georgian tradition of toasting with the kantsi, a horn-shaped drinking vessel used at feasts, and also symbolizes the "horns of the land," reflected in dishes of bison, elk, lamb, and quality cuts of meat.

Before opening Pearl & Horn, George and Luba Lazi launched their first restaurant in Pensacola, George Bistro + Bar. The experience led them to seek a new culinary adventure to expand their dining offerings in the area, resulting in this second concept.
