A taco counter with room for the less familiar cuts

El Taco-Miendo’s tacos arrive with onion and cilantro, leaving the choice of filling to do most of the work. Alongside asada, pastor, carnitas and chicken, the list includes cabeza, lengua, tripa and buche. Chorizo and campechano provide other routes, while chile relleno offers an alternative to a meat taco. Quesabirria adds cheese to the braised-beef filling and is also available as a three-piece order.

The attraction is the ability to order individual tacos rather than one large combination. Someone who knows pastor but has never tried cabeza can make that comparison without replacing a whole lunch. The advertised Tuesday special covers selected fillings, including carnitas, pastor, buche, cabeza, chicken and beef; the ordinary menu has a broader range.

Beyond tacos, the kitchen prepares huaraches, sopes, gorditas, tostadas and tortas. Its Cubana layers chorizo, egg, steak, sausage and ham with cheeses, vegetables and mayonnaise. Caldo de res, chicken soup, menudo and birria move into bowl-sized meals. Handmade tamales are available by arrangement: holiday orders require at least a week, while ordinary smaller orders need a few days.

The address is 401 South Parker Street, near Rolling Ridge School Park; 913-538-6494. The main website lists Monday and Wednesday–Saturday 9 a.m.–7 p.m., Tuesday 9 a.m.–8 p.m. and Sunday 9 a.m.–5 p.m. Its separate Menufy ordering page shows shorter collection and delivery windows and no Wednesday service. The main website now links to a Heartland checkout; use that current checkout for an order rather than treating older ordering hours as the dining schedule.
