César is a fine dining restaurant located at 333 Hudson Street in New York. It was opened in July 2024 by chef César Ramirez after 37 years of professional dedication. In less than five months since opening, it earned two Michelin stars. In 2026, OAD ranked it #1 in North America.

Chef's career

César Ramirez was born in a small town in Mexico City. His great-grandmother was of Spanish origin, and Mexican cuisine sparked his interest in gastronomy from a very young age. He grew up in Chicago, where he worked in some of the city's finest restaurants. He later traveled to Europe to experience its culture and gastronomy up close. In 1998 he moved to New York, where he spent nine years working with David Bouley at Danube and Bouley. As executive chef, he led Bouley, considered one of the best restaurants in New York. There he came into contact with Japanese cuisine, which led him to travel frequently to Japan to study its culture, ingredients, and techniques, now key components of his cooking.

In 2010 he received two Michelin stars, and in 2011 he earned the third, maintaining this recognition for eleven years.

Spaces and dining experiences

The restaurant organizes its offering around several distinct spaces:

• The Salon: a stylish and semi-private dining experience, designed to enjoy the chef's tasting menu. Includes alcoholic and non-alcoholic pairing options. Accommodates parties of 2 to 5 guests.
• The Dining Room: luxuriously spaced tables with a view of the open kitchen, for groups of 2 to 4 guests. The chef's tasting menu is served, and all guests at the table must participate in the same menu.
• The Counter: a white oak counter facing the kitchen, with side-by-side seating, for groups of 1 to 4 guests. Reservations for this counter are managed through Resy.

César specializes in hosting celebrations, corporate events, and gatherings with friends or family. The restaurant describes its dining room as spacious, with a sleek modern interior and attentive staff. The offering for these events includes additional menu options, signature dishes, and a thoughtfully arranged wine list. Special requests are handled through the reservationist.
