Moya

Chef-owned Race Street restaurant combining Heriberto Yunda’s changing menu with co-owner Stephanie Verme’s artwork and a shared-plate approach to dinner.

About Moya

Moya brings a personal culinary and artistic identity to Race Street. Chef and co-owner Heriberto Yunda was born in Ecuador and developed his career in New York before establishing the restaurant in Jim Thorpe. The name refers to his hometown, La Moya. Co-owner and manager Stephanie Verme contributes the paintings displayed in the restaurant, connecting its dining room with her work as an artist.

The menu crosses culinary traditions instead of presenting itself as a fixed regional repertoire. Published dishes include crab gnocchi, short ribs with a port reduction and roasted branzino, alongside salads, vegetables and pasta. These illustrate the kitchen's range; the restaurant explicitly changes its menu with ingredient availability, so individual dishes should not be treated as permanent promises.

Service follows a sharing format, with plates sent as the kitchen prepares them. Protein dishes are listed separately from vegetables and starches. Understanding that structure helps diners compose a meal and avoids expecting every main dish to arrive with conventional accompaniments.

Moya currently advertises evening service from Thursday through Sunday. Its appeal lies in the combination of an identifiable chef, an independently conceived dining room and a flexible menu. It is a strong candidate for travelers seeking a considered dinner in town; reservations, dietary requirements and the current menu are best discussed directly with the restaurant.
