The inspiration: the maguey and the goddess Mayáhuel

The restaurant's name refers to Mayáhuel, a figure from Mexica mythology associated with the maguey. In Nahuatl, the term is linked to metl (maguey) and yahualli (circle), and the company describes it as "what surrounds the maguey." The plant, they note, blooms only once in its lifetime, between 7 and 15 years of age, through a stalk called the quiote. That idea of waiting and transformation is what the company places at the heart of its cuisine and its bar.
