About Mugen Waikiki
Mugen Waikiki: Global Author Cuisine in the Heart of Waikiki
Mugen is a fine dining restaurant located in ESPACIO, The Jewel of Waikiki, in Honolulu, Hawaii. Its name means "infinity" in Japanese, and its offering revolves around seasonal tasting menus that blend Hawaiian heritage with culinary influences from around the world. The intimate venue seats 34.
The experience is designed as an interactive journey: the team guides guests through the inspiration, technique, and unique ingredients of each dish. Most ingredients and flavors come from the island, thanks to the chef's relationships with local purveyors and farms.
A Team with Hawaiian Roots and International Reach
Executive Chef Colin Sato, a Hawaii native, has spent much of his career in the state's leading hotels. Tokyo-based Pen Magazine included him in its "Top 100 Global Japanese Chefs" list. Sato leads a team that has redefined the restaurant's fine dining experience with innovative concepts and seasonally inspired menus, with consulting from renowned Chef Alan Wong.
The wine cellar, overseen by Captain Sommelier Douglas Priesel, holds 400 bottles and has earned the Wine Spectator "Best of" Award. The contemporary cocktail list is crafted with local and seasonal ingredients and select spirits.
