About Rancho de Chimayó
Rancho de Chimayó, New Mexican cuisine in an ancestral home
Rancho de Chimayó is a family-run New Mexican cuisine restaurant located in Chimayó, New Mexico. Its origins date back to 1965, when Florence Poulin and Chimayó native Arturo Jaramillo opened it in the restored family home, using recipes perfected over generations. The business presents itself as a family-owned and operated establishment that continues the vision and legacy of Florence Jaramillo, known as "Mrs. J."
A key figure: Florence Jaramillo
Born Florence Poulin in Hartford, Connecticut, she came to New Mexico when she married Arturo Jaramillo. The State of New Mexico honored her as a "Culinary Treasure." She was named New Mexico Restaurateur of the Year in 1987, served on the boards of the New Mexico and National Restaurant Associations, and received the Lifetime Achievement Award from the National Restaurant Association. She also held the rank of Honorary Colonel in the United States Air Force. She passed away in 2025.
The cuisine and its signature dishes
The menu is based on the tradition of regional cultivation, seed varieties, and recipes passed down for generations. The village of Chimayó, in the foothills of the Sangre de Cristo Mountains, is known for its Santuario and for a unique, highly prized variety of red chile. Florence and Arturo Jaramillo built the menu from personal, local, and family influences.
Among the dishes the house presents as its signatures are spicy guacamole, hand-rolled tamales, blue corn enchiladas, carne adovada, and chile rellenos. The offering includes a prickly pear margarita made with its signature tequila and wines from a full bar. To finish, it offers sopaipillas with fresh local honey and seasonal desserts.
Hacienda and online store
In addition to the restaurant, the business operates a hacienda or country inn with its own information and reservations. It also maintains an open online store and offers a cookbook among its offerings.

The business recommends making reservations and handles requests by phone. Janet Malcom is listed as the contact for private party inquiries. For media and press inquiries, the contacts listed are Andie Manzanares and Zina Jundi.
