About Calacas Tacos & Beer Brownsville

Small street tacos and more elaborate plates

Calacas began in Brownsville before expanding across the Rio Grande Valley. The Pablo Kisel restaurant has a menu broad enough for a table to move between small street tacos and composed orders. The useful starting distinction is size and construction: bistec brings sirloin, onion, cilantro, avocado and cheese; pastor uses marinated pork and pineapple. Cochinita pibil and crisp tripita provide two further directions.

The signature section gives particular cuts their own treatment. Pancita tacos use fried pork belly with cabbage and a red-onion-and-habanero mixture. Baja tacos place breaded white fish in charred corn tortillas with cabbage, avocado, pickled onion and chipotle dressing. Quesabirria adds asadero cheese to marinated beef with dipping broth. A cheese-shell Tako Keto wraps fajita or pastor in Oaxaca cheese instead of a tortilla.

For sharing, chicharrón de ribeye pairs fried steak with guacamole, pickled onion and grilled panela. A separate pork-belly appetizer takes another route through the same crisp-and-rich combination. Choriqueso, charro beans and street corn let the table add sides without buying another main course. Flour-tortilla quesadillas include gringa with pastor and pineapple, chicken with chipotle, and birria.

Brownsville locations and ordering

  • Pablo Kisel: 3340 Pablo Kisel Boulevard; 956-518-7800. Monday–Thursday and Sunday 11 a.m.–11 p.m.; Friday–Saturday 11 a.m.–midnight, according to the branch's website.
  • Downtown: the restaurant's ordering system also lists 1024 East Adams Street, Suite 100; 956-576-8248. Its menu and ordering timetable are separate from Pablo Kisel.
  • Airport: that system lists 700 Amelia Earhart Drive with the same contact, 956-576-8248. Airport service should be distinguished from a street-access restaurant.

The two additional counters remain in the merchant's ordering directory, but a complete current public weekly schedule was not established for them. The main Pablo Kisel restaurant lists pickup and appears on delivery platforms; platform availability depends on the address. The published phones are restaurant contacts, not dedicated delivery numbers.
