Tacos La Villa traces its beginning to Bakersfield in 1993. Its growth across the Central Valley has left the city with numerous counters, but they remain one business for this guide. Rosedale Highway is the main address here, with the other current Bakersfield locations listed together below.

The Rosedale taco menu goes beyond asada and pastor to lengua, tripa, cabeza, buche, carnitas, chorizo, chicken and chile verde. Standard meat tacos use salsa, onion and cilantro. Fish arrives breaded with lettuce, chipotle sauce and pico de gallo; shrimp uses the same vegetable and sauce combination. A quesataco adds melted cheese around the chosen meat.

Birria has its own section: soft taco, quesabirria, larger quesadilla, burrito, fries and ramen. Consomé is also listed separately. For a group, that distinction matters: a cheese-filled taco and a soup are different orders, and broth should not be assumed to arrive with every item. La Villa Fries put meat, cheese, guacamole, pico, sour cream and jalapeños over potatoes; nachos use a chip base with beans.

Breakfast offers chilaquiles, eggs, tortas and burritos. The loaded breakfast burrito combines chorizo, ham, sausage and bacon, while the classic allows a single meat choice. The printed menu also offers a fifty-taco platter and trays of rice and beans for a larger gathering.

Branch hours vary. North Chester lists daily 7 a.m.–10 p.m.; Oswell lists weekdays 9 a.m.–10 p.m. and weekends from 8 a.m. Rosedale’s official pages disagree on whether opening is at 5 or 7 a.m.; both advertise late Friday–Saturday service until 3:30 a.m. A single chain-wide opening time would therefore be misleading.
