About Cotswolds Distillery

In July 2014, a distillery opened from a question about the Cotswolds’ barley fields. Dan, its New York-born founder, had left behind years working in London finance and wanted a business connected to the landscape where he lived with his family. That idea took shape in Stourton and eventually brought together whiskey, gin, and spaces for learning about their production.

Gin was the first project. The team distilled botanicals individually and tested combinations before selecting the Cotswolds Dry Gin recipe. Signature Single Malt Whisky arrived in October 2017 and remains at the center of the whiskey collection. Later expressions explore bourbon, sherry, and peated casks, alongside selections such as Founder’s Choice and Hearts & Crafts editions.

The gin range expands into Old Tom, Wildflower, and Hedgerow, alongside Dry Gin Essence. Summer Cup, Wild Spritz, Cream Liqueur, and Whisky Amaro develop other preparations. Miniature bottle sets allow expressions to be compared, while Glencairn glasses, gin glasses, and measures accompany gifts and serving the drinks.

A distillery visit tours production and the cask warehouse, followed by a guided tasting of spirits and liqueurs. Whiskey blending classes offer more direct involvement in building a drink. The business works with local barley and describes on-site wetlands as part of its sustainability initiatives and wildlife habitat.

Still House Café adjoins the working distillery, allowing a visit to include coffee or a meal. Its menu features sharing boards, sourdough pizzas, and cakes with locally sourced products. Hidden Still Cocktail Bar adds afternoon and evening cocktails, and the events program gathers live music and terrace sessions.

The Stourton site is at Phillip’s Field, Whichford Road, CV36 5EX. Two other shops are at 2 The Forge, High Street, Bourton-on-the-Water, GL54 2AN, and 33 High Street, Broadway, WR12 7DP. All three carry the house whiskey, gin, and liqueurs, including some expressions exclusive to the distillery’s shops.

Each location has its own shopping hours, and experiences are reserved separately. Tour, shop, and order inquiries have distinct contact channels. Cotswolds Distillery allows a complete visit: see the stills, understand the casks, stop in the café, and choose a bottle. The business’s origins remain tied to barley and a way of turning the Cotswolds landscape into spirits.
