MayHawk began in London in 2007 with a process-centered idea: making chocolate from cocoa bean to finished bar. The British brand works in small batches and separates origin collections from recipes with additional ingredients. Its Chocolate Studio brings research, preparation, and design together to develop both the contents and packaging of each product.

Cocoa selection comes before production. The company uses single-origin beans and explains that it pays a premium above commodity reference prices. Peru, Madagascar, and Colombia feature in its Single Origin set, which brings together three two-ingredient bars. The offering compares different cocoas without combining their origins in a single recipe.

At the studio, beans are checked and sorted before roasting. Each origin has its own temperature and timing profile; husks are then removed to obtain nibs. Grinding on granite and prolonged conching develop texture and aroma. Tempering and molding complete a sequence the company performs in its own facilities.

Origin recipes rely on cocoa and unrefined cane sugar; others add cocoa butter, fruit, nuts, or botanicals. MayHawk states that it uses no emulsifiers or artificial additives. Some herbs and spices grow in a greenhouse integrated into the studio since 2012, and the team explores preservation and fermentation methods for new creations.

Dark & Stormy uses rum-soaked stem ginger prepared at the studio, while Darksome Milk develops its dark milk chocolate offering. Midnight and Heritage editions organize other products, alongside limited-release projects. Research includes double-fermented cacao and fermented fruit, with techniques adapted to each recipe.

The Discovery Set brings together eight bars to explore the selection, from forty-percent milk chocolate to eighty-one-percent dark chocolate. Origin bars sit alongside those with additional ingredients. Shoppers can start with that comparison or choose the three-origin set, which focuses more closely on differences between cocoas.
