Porthilly Spirit Distillery
Cornish spirits brand with gin, vodka, rum, cocktail recipes, and Porthilly Bar and Bottle Shop by the beach in Rock.
About Porthilly Spirit Distillery
The landscape of Trefresa Farm, less than a mile from north Cornwall’s coast, inspired Porthilly Spirit. Its farmhouse and hedge-lined fields shaped a family of drinks connected to land, estuary, and sea. The team no longer lives on the farm, but that sense of place remains in the recipes and its relationship with the community.
Production has developed with Cornish master distillers and collaboration with an established distillery. That arrangement enabled the first small batches and the growth of the collection. Creating its own distillery and growing ingredients with neighbors are part of the vision the brand describes for its development.
Cornish Coastal Gin introduces the selection. The brand lists two Great Taste stars and a SIP Awards gold medal for this gin, recognition tied to the product. Cornish Vodka, Pure Golden Rum, and Cask Aged Rum broaden the choice to vodka, golden rum, and barrel-aged rum, each with its own shop presentation.
The recipe collection brings bottles to the table through identifiable cocktails. Dirty Martini, Blood Orange Negroni Spritz, and Elderflower Collins offer different combinations, from a martini profile to blood orange or elderflower notes. They provide a way to explore the collection through a specific preparation and choose according to the drink someone wants to serve.
Porthilly Bar and Bottle Shop is at Beachside in Rock, by the beach. It combines cocktails with wine, local beer, and tapas. The bottle shop offers purchases to take home, while the bar provides a table for enjoying the selection in the landscape that inspires the brand. Reservations use its table booking channel.
Baby Bay Beach Club offers another setting, outdoors on the sand and inspired by Spanish beachside chiringuitos. The two venues serve different roles: one combines a bar and bottle shopping in Rock; the other offers a beach dining experience with its own calendar. Events and classes add ways to explore the project beyond an individual purchase.
The journal records encounters with producers and chefs, including Yallah Coffee, Prawn on the Lawn, and Andi Tuck. These collaborations connect drinks and food at celebrations, galleries, and other settings. Online sales include spirits, gifts, and branded merchandise, while trade inquiries serve businesses seeking to add the drinks to their own offering.
