About Thyme
Thyme, a family estate in the Cotswolds
Thyme presents itself as a family story in which a passion for the land, gastronomy and the art of hospitality is combined with a love of nature, beauty and conservation. The estate occupies a historic 150-acre English country estate in the Cotswolds hills, where gravel paths wind between 17th-century houses and cottages and restored agricultural barns, forming a small, peaceful hamlet.
Accommodation and spaces to rest
The accommodation is spread across 31 bedrooms distributed among houses and cottages, surrounded by formal gardens with winding pathways. The setting invites you to slow down and reconnect with nature in an English countryside environment.
Restaurants and bars
The dining offering is arranged around several spaces. The Ox Barn restaurant applies the farm-to-table approach, with menus that follow the seasons and options such as the Sunday Lunch served in a family-style, sharing format. The Swan is the hamlet's pub, with a cosy atmosphere, and the Orchid House allows you to eat by the pool. The Baa Bar is the place to enjoy a cappuccino or a glass of vin santo.
Meadow Spa and wellbeing
The Meadow Spa is described as a place to relax and restore. Its programme includes sessions such as Slow to Flow Yoga, taught by Sæunn of SajaRut Yoga, a gentle 60-minute class to wake up on Saturday morning.
The cookery school and the calendar of activities
The cookery school allows you to learn new techniques in a practical setting. The calendar of activities, inspired by the seasons, brings together talks, workshops and events ranging from cookery and floristry to cocktails and painting. Among the announced options are workshops on French canapés, Italian biscuits such as almond ricciarelli, chocolate and hazelnut biscotti or baci di dama, and sourdough bread with Max Abbott, of Sourdough Revolution. There are also workshops on seasonal bouquets with Head Florist Sophie Witham, embroidery with Remnant Revolution using Bertioli fabric remnants, and garden walks with lunch in the Ox Barn that take in the orchard of apple, pear and plum trees, the kitchen and cutting gardens, and the Alitex greenhouse. The programme also includes wine-paired dinners, such as the Ox Barn Wine Supper Club with the Champagne house Pol Roger, founded in Épernay in 1849, and with Artelium Wine, an estate in the South Downs.
Farm, gardens and the Bertioli brand
The estate has its own farm and gardens, which supply fresh produce and flowers to the kitchen and the estate's spaces. Bertioli by Thyme is a brand linked to the project, present in workshops and in the shop, which includes items such as the Thyme Sheep Seats.
Shop and other services
The online shop offers its own products and gift vouchers. The estate also accommodates gatherings and workshops, and has spaces such as the Tithe Barn, used for temporary exhibitions, such as the show of chicken paintings by gardener and writer Arthur Parkinson inspired by his book 'Hen Party'.
