BRIX Café, signature pastry by Jumeirah Fishing Harbour

BRIX Café is a dessert restaurant and coffee house located in Jumeirah Fishing Harbour, Dubai. It was born by the water with a simple idea that the company itself sums up as "flavor first, sweetness second." The venue combines a walk-in café with a dessert tasting experience served at a chef's table for twelve guests.

The concept is divided into two formats. On one hand, the café, designed for casual meetups or a solo sweet break, with handcrafted chocolates, specialty coffee, and light bites. On the other, BRIX Journey, two multi-course dessert tasting menus in which the pastry chefs prepare the creations in full view of the guest.

The pastry chef: Carmen Rueda Hernández

Leading the creative direction is Carmen Rueda Hernández, recognized as the Best Pastry Chef in the Middle East & North Africa in 2025, an award sponsored by Valrhona. The company presents her as one of the most innovative pastry chefs in the United Arab Emirates, a renowned chocolatier, and a two-time runner-up at the World Chocolate Masters.

Her training began with four years of culinary science studies at the Culinary Art and Tourism Institute in Madrid, where she gained knowledge of techniques, theory, and food philosophy. She then moved to Barcelona to work with one of the most innovative pastry chefs and chocolatiers of the time. Later she specialized in chocolate in France, alongside a world champion pastry chef, and spent time at El Bulli, where she discovered new techniques, flavors, and forms of creativity.

She continued her career in Bray, United Kingdom, at Heston Blumenthal's restaurant The Fat Duck, where she stayed for a year before competing in the World Chocolate Masters and taking third place. She subsequently worked in Asia with Janice Wong at 2 AM Dessert Bar and as head chef, and returned to The Fat Duck to take part in redeveloping the menu after its reopening. She also developed pastry concepts in Cape Town, with dessert bar and tapas offerings, innovative baked goods, and chocolate creations. In 2019 she settled in Dubai as executive pastry chef for Five Hotels, and in June 2020 had a stint at Nobu Hotels, before establishing herself at BRIX.

Recognition and presence in culinary criticism

The site includes mentions from media and critics who describe the venue as one of the best cafés in Dubai in 2025, a culinary destination by the harbour, and a homegrown must-visit. It also cites the collaboration with ME Dubai, with a menu signed by Carmen Rueda Hernández, and highlights creations such as the handcrafted croissants and the Basque cheesecake.

Team

The front-of-house and kitchen team combines hospitality training and experience at various establishments. Camille, with studies in hospitality and restaurant management, worked at several cafés and supervised Pret A Manger for more than six years before taking charge of the customer experience at BRIX. Herschel trained at the Technical School of Hotel and Restaurant Management and worked as a pizzaiolo in Italian restaurants and making maki in sushi restaurants. Protima studied hotel management and catering in Bombay and came to Dubai, where she went from commis at Tresind to junior sous at BRIX. Saumya earned a tourism degree in India and a pastry certificate at Le Cordon Bleu in Sydney; she worked as CDP at InterContinental and at Five Hotel before joining BRIX as junior sous.
