About Ekstedt

Ekstedt, Nordic cuisine cooked over fire in Stockholm

Ekstedt is a Stockholm restaurant that builds its entire culinary concept around fire. Opened in 2011, the establishment has become known for a distinctive approach to Nordic cuisine in which traditional techniques are combined with contemporary creativity and every dish is cooked over open flames. Birchwood and smoke are, according to its own presentation, the house's most powerful tools: natural heat, soot, ash, smoke, and fire.

Direction by Florencia Abella and Scandinavian techniques

The restaurant is led by head chef Florencia Abella and evolves with the seasons, with an offering that seeks a sensory experience rooted in nature and craftsmanship. The kitchen draws on ancient Scandinavian techniques to create contemporary food with carefully selected seasonal ingredients and Swedish flavors. Niklas Ekstedt himself has described the equipment the restaurant uses—a fire pit, a wood-fired oven, and a wood stove—and has noted that, despite warnings about the difficulty of that approach, he has continued to make things more and more challenging for himself and his team.

Influence of Argentine asado

The concept also incorporates a stated influence from asado. In words quoted on the site, the chef grew up in the suburbs of Buenos Aires, in a family deeply rooted in the tradition of cooking with fire, and her father taught her the art of asado, showing her how to harness the primal glow of open flames and transform it into a culinary philosophy in which fire is not just a method, but the heart of the gastronomic experience.

Reservations, table policy, and tasting experience

The restaurant accepts reservations three months in advance and releases tables one day at a time. When the desired date is fully booked, it offers a waiting list that guests can join to be contacted if a table becomes available. The dining experience requires about three hours. The establishment does not accept cash and, due to the nature of the experience and the limited space, cannot accommodate children who are not able to enjoy the full tasting menu; it also does not offer a children's menu. The limit is six people per party, and for dinners of six or more people it asks guests to contact by email or phone.

Menus, events, and other services

The restaurant's website includes sections for menu, events, gift card, gallery, history, news, and FAQ, as well as a newsletter to follow events and news. It also has a careers page where it states it is looking for passionate and curious people who share its respect for raw ingredients, traditional techniques, and the energy of a collaborative kitchen.

Other chef initiatives

The site links to Niklas Ekstedt's other restaurants, confirming that the chef maintains a broader hospitality activity beyond this establishment.
