About Arrels Restaurant
Arrels Restaurant: cuisine rooted in Sagunto’s old town
Arrels Restaurant is a fine-dining address in the old town of Sagunto, in the province of Valencia. Its cooking is guided by the market, the quality of the produce and close ties to local suppliers, while a creative, contemporary approach gives the dishes their own identity. The restaurant describes excellence in its ingredients and honesty in their preparation as the two principles behind the kitchen.
Chef Vicky Sevilla and the origins of Arrels
Chef Vicky Sevilla opened Arrels when she was just 25. Her cooking draws on memory, place and produce, bringing technique and raw ingredients together in dishes with a distinct point of view. Sevilla has also taken part in culinary events including the D*NA Festival, promoted by Quique Dacosta, and Gastrónoma Valencia.
A dining room in the former stables of the Palace of the Dukes of Gaeta
The restaurant occupies an unusual historic setting: the former stables of the Palace of the Dukes of Gaeta, a 16th-century medieval palace. It stands at 18 Calle Castillo, on the route through Sagunto’s old quarter toward the castle. Architectural features preserved in the dining room include two Gothic arches, a Mozarabic arch and a Romanesque arch. The setting reflects the project’s attempt to unite tradition, respect for the past and a creative view of contemporary cooking.
Lunch and dinner service
Lunch is served from Tuesday to Saturday. The restaurant opens from 1:30 p.m. to 6 p.m., with the kitchen taking orders from 1:30 p.m. to 3 p.m. Dinner is available on Thursday, Friday and Saturday from 8:30 p.m. to 12:30 a.m., with kitchen service from 8:30 p.m. to 10 p.m. Phone enquiries are handled from Tuesday to Friday between noon and 1:30 p.m. The restaurant states that reservations are not taken by email or phone.
