Vitalchef makes sous-vide meat dishes that can be finished in the oven or skillet at home, using meat from Spanish local farms. The project is part of Damma, a meat company operating since 1930.
About Vitalchef
Prepared meat, ready to finish at home
Vitalchef is a line of prepared meat dishes cooked sous vide at low temperatures, then finished in an oven or skillet in a few minutes. Its catalog focuses on selected meats from local Spanish farms, with an emphasis on protected designations of origin and native breeds.
The project belongs to Damma, a company that has distributed and prepared meat products since 1930, according to its website. Vitalchef combines that meat expertise with vacuum-sealed dishes that can keep for up to four months when stored at 0–3°C.
Products
- Castilla y León suckling lamb: IGP-protected lamb from Churra, Castellana, and Ojalada breeds, fed only on their mothers' milk. Available as a quarter (about 1.5 kg, four to six servings), shoulder (600 g), or leg (700 g). Finish in a 220°C oven for 30 minutes.
- Segovia suckling pig: milk-fed piglet. Options include half (about 2.2 kg, four servings), quarter (about 1.1 kg, two servings), shoulder (about 0.5 kg), leg (about 0.6 kg), and a portion (about 0.6 kg). Finish in a preheated 250°C oven for 15 minutes per side.
- Spanish Duroc pork ribs: cooked sous vide and offered with barbecue, Cajun, or honey-mustard sauce; 900 g.
- Pork knuckle: cooked sous vide, 900 g for two servings; finish in a 220°C oven for 30 minutes.
- Angus burgers: made in-house by hand, about 200 g each, with options such as goat cheese and caramelized onion, blue cheese, porcini mushrooms, cured beef, or aged beef and ibérico pork secreto.
- Cachopos: handmade breaded cutlets, about 350 g, with fillings including serrano ham and cheese; cured beef and Cabrales blue cheese; foie gras and caramelized onion; or blood sausage and pepper jam.
- Beef tail: slow-cooked with red-wine sauce, about 800–900 g, intended for two.
- Pork-foot terrine: boneless Duroc pork, about 400 g, intended to be seared in a skillet.
- Quail: two birds, pickled and cooked sous vide, about 500 g.
- Pheasant: cooked sous vide and ready in about 15–20 minutes, depending on the cooking method.
