About Quesos El Chozo

Sheep's-milk cheese made by hand in Mora

Quesos El Chozo is a small artisan cheesemaker in Mora, Toledo, devoted to cheese made entirely from Manchega sheep's milk. Its family tradition began more than 50 years ago with Felipe García, and the business is now led by his daughter Ana García.

Production

The cheesemaker produces about 90 cheeses every two days, made by hand. Each morning, it collects milk from Manchega sheep farms and turns it into cheese that day. The milk is pasteurized, and the process follows traditional methods.

Cheeses

  • Requesón, a fresh whey cheese
  • Fresh cheese
  • Semi-cured cheese
  • Cured cheese
  • Aged cheese
  • Cheese in extra-virgin olive oil, a house specialty

Cheeses are sold as eighths, quarters, halves, and whole wheels. The oil-preserved cheese uses extra-virgin olive oil from local groves in Mora, a town with a long olive-growing tradition.
