The catalog is organized by animal:

• Lamb: offal (suckling, yearling, and cut-up), heads, cheek meat, testicles, abomasum, mesentery, epiglottis, small intestines (gallinejas), liver, tongues, trotters, sweetbreads, tripe, lungs, kidneys, brains, caul, intestines, and zarajos.
• Beef: aorta, tripe, tripe with foot and snout, head skin, cheek meat, heart, testicles, abomasum, skirt steak, esophagus, throat, liver, lips, tongue, omasum, lean meat, sweetbreads, snout, ear, feet, pizzle, lungs, tails, kidneys, tendons, tracheas, trim, and penis.
• Pork: head skin, cheek meat, heart, testicles, abomasum, bung, liver, tongues, feet, sweetbreads, snouts, ears, kidneys, blood, and trotters.

Services and Sales Formats

The company sells loose offal, in modified-atmosphere trays, and frozen, tailoring formats to professional customers. It has two trade counters for professional buyers at its facility.
