Grupo Kabuki: Japanese and Mediterranean cuisine with restaurants in Madrid and Lisbon

Grupo Kabuki is a Spanish restaurant group that articulates its proposal around its own concept, the so-called Kabuki cuisine, defined by the confluence of Japanese and Mediterranean culinary traditions. The group places the origin of this approach at the opening of its first restaurant, more than two decades ago, when it began placing side by side on the menu with dishes of strict Japanese orthodoxy. Over time, this combination gave shape to a culinary identity that the company associates with the quality of the ingredients and simple and elegant preparations, designed so that the flavors of the product are expressed with the greatest possible purity.

Structure and operation of the group

The organization of the group is based on a decentralized team by restaurants. Each restaurant shares the same philosophy, but adapts its offer to the customers, the products of the area and the local gastronomy of its surroundings. The corporate team supports the restaurants with everything necessary so that they can focus on the quality of the preparations, the service and the guest satisfaction. According to the company, this corporate team is formed by experts in different areas that have previously worked in the restaurants themselves, which allows them to know their functioning and their needs.

Kitchen, dining room and wine

The group’s cuisine is based on an initial concept that has been developed with the contributions of the chefs of each restaurant. They have enjoyed freedom of creation, and their dishes have been incorporated into the menu of their own place and that of other restaurants of the group. In the dining room, the directors and sommeliers have defined and maintain in evolution the methodology of service and the offer of drinks.

For wine service, the group initially counted on the advice of Juancho Asenjo, whose criteria remain present in the wine offer. Currently it has a team of sommeliers distributed among the different restaurants, under the direction of Victor Riego. Like the chefs, the sommeliers have autonomy to make their wine lists within the criteria established by Kabuki.

Group restaurants

The group operates several restaurants. Kabuki Madrid, located on 38 Lagasca Street, in the Salamanca district, brings together three concepts in the same space: a bar, a restaurant room and a terrace whose opening was announced as next. The first Kabuki opened in 2000 and functions as the original home of the concept, which has developed and expanded from it. Kabuki Lisboa, distinguished with a Michelin star, occupies an emblematic space of the Portuguese capital, the Ritz Galleries, subjected to an complete renovation.

List of wines and pairings

The wine list of the group includes a wide representation of the main producing countries. The company highlights the weight of champagnes, white wines and sakes, chosen for their harmony with Kabuki cuisine. In addition to the gastronomic offer, the group markets menus adapted to different needs, which can be complemented by proposed pairings or with drinks of the menu. It also allows to give a pairing on its own, a bottle of wine, sake or cocktail, selected from its menu. This modality is valid for any restaurant service and is subject to availability.

Other activities and services

Beyond the Kabuki restaurants, the group develops other complementary concepts and activities, including the Kirei of the airports and the Kuenko of Miami. It also offers the possibility of offering gastronomic and hospitality experiences under the name Regala Kabuki.
