About DiverXO

DiverXO, Dabiz Muñoz's avant-garde haute cuisine in Madrid

DiverXO is a fine-dining restaurant located in Madrid, founded in 2007 by chef Dabiz Muñoz. The establishment is presented as the only restaurant in Madrid with three Michelin stars, a distinction its founder achieved at the age of 33, becoming the second youngest chef in the world to achieve it. The project was born with limited resources and the intention to break with established fine-dining conventions to build a language of its own.

A gastronomic experience around menus

The restaurant's proposal is articulated around a food menu at its center, which can be complemented by a liquid menu or with different pairing options. The main tasting menu is called La cocina de los cerdos voladores and has a price of €450 per person. It is described as a creative and radical journey through the cuisine of Dabiz Muñoz, with courses that combine technique, risk and global flavors.

Liquid menu and pairings

The liquid menu "Metamorphosis" is offered from €250 per person, in half menu format for €250 or full menu for €450, and is available only with the food menu. It is a liquid cooking proposal with its own identity, which explores creative drinks without alcohol as part of the gastronomic narrative.

The winery of the restaurant is presented as a selection in constant search of new references. The catalog shows four wine-pairing options: Eruciforme, with understated wines of character, at 300 € per person; Crisálida, with unique origins and great references, at 600 €; Danaus Plexippus, with notable names and bottles, at 900 €; and Imago, an option guided by the sommeliers of the restaurant, at 300 €. The pairings do not include water, coffee or tea.

The chef and his culinary universe

Dabiz Muñoz conceived from a young age the idea of opening his own restaurant. His father’s skeptical response — “You’ll get it when pigs fly” — gave rise to the symbol of pigs with wings that identifies the restaurant. After training in London and getting to know some of the world’s most influential cuisines, he returned to Madrid to develop his own path marked by intuition, creativity and the constant search for new boundaries.

That non-conformism has given rise to a universe that extends beyond DiverXO, with other concepts such as StreetXO, RavioXO and GOXO.

Career and recognition

Since its opening in 2007, the restaurant has evolved to get its first, second and third Michelin stars. The company presents itself as one of the best restaurants on the planet, a claim attributed here to the restaurant’s own presentation. Its essence, according to the establishment itself, remains intact since its inception.
