About Coque
Coque, haute cuisine of the Sandoval brothers in Madrid
Coque is a fine dining restaurant run by the Mario, Rafael and Diego Sandoval brothers, the third generation of a family that spent more than 40 years running a family dining house and restaurant in the same building in the town of Humanes. The business moved to a new setting in order to grow and has opened its doors in the heart of Madrid, in a space of 1,100 square metres.
The restaurant has two Michelin stars, three ‘M’ distinctions from the Metrópoli Guide and three Repsol Soles.
A project conceived by the third generation
Mario, Rafael and Diego Sandoval have devised the space by applying their individual strengths and interests, under the overall supervision of designer Jean Porsche. As Mario Sandoval explains, the result is a project that transmits the current strength of the restaurant. The decoration and layout are designed for the enjoyment of the diner and constitute an original and unique gastronomic experience.
A sensory tour in four spaces
The experience is articulated as a sensory journey through four spaces: cocktail bar, wine cellar, kitchen and dining room. The tour is personalized and ends in the dining room. In each room, the client savors the result of Mario Sandoval's creative mind, with an evolved cuisine but firmly grounded, which adapts and investigates to refine every bite.
Menus and proposals
The restaurant's offer includes the Menú Investigación and a menu identified as 18 18+. It also has a New Year's Eve menu and the proposal La Mantequería en Casa, as well as gift cards.
Training and publications
The restaurant offers courses and has published books.
