About La Bicoca

Traditional pa de coca, made by hand

La Bicoca is an artisan bakery devoted exclusively to making pa de coca for restaurants, hospitality businesses, and caterers. It was started by two people with backgrounds in baking, with the goal of offering a traditional product made by hand.

Product and formats

Its specialty is an approximately 80-centimeter-long pa de coca loaf, designed for serving and to make the most of each piece. It is sold in boxes of 15 loaves and in formats of six 14-centimeter sandwich portions or 16 double 5-centimeter portions.

How it is made

The dough is worked by hand and allowed to ferment at its own pace. The loaves are baked on a stone hearth in batches of 48. The company says it uses no additives or preservatives—only flour, water, salt, and sourdough starter.

Service for restaurants and caterers

La Bicoca works exclusively with restaurants, hospitality businesses, and caterers. It delivers fresh, ready-to-serve bread each morning from Tuesday through Saturday.
